I usually start off my day with a bowl of porridge, topped with nuts, seeds and fruits. Before I go to bed, I prepare my breakfast for the next day. I soak oats, nuts and seeds overnight. Soaking helps the oat starches break down and increases the vitamin content of your nuts and seeds. Remember, all nuts and seeds contain phytic acid and large amount of enzyme inhibitors which protect them from sprouting. Soaking also makes them much easier to digest and absorbed by your body.
