I have made this Banana Pie several times now and it is delicious. It definitely looks and tastes like you worked a lot harder than you did! Now I know if I follow the recipe, it will work and be delicious.
Ingredients: 70g butter (plus extra for greasing), 50g chopped walnuts, 330g almond flour, 3 eggs, 2 mashed bananas (plus 1-2 for decorating), 55g honey, 1tsp ground cinnamon, 1 tsp vanilla bean paste, 1 tsp bicarbonate of soda
Tips: you can replace walnuts with any nuts of your choice. You could also use half self-raising flour and half almond flour.
- Preheat oven to 180C. Grease the tin, arrange sliced banana decoratively and set aside.
- Mix all ingredients until smooth. Transfer mixture into the tin and bake for 40 minutes or until wooden skewer inserted into the centre of the pie comes out clean. Once ready, transfer onto a wire rack to cool completely before serving.
- Optional: use this delicious chocolate glaze over a cake. All you need is: 100g dark chocolate, 100ml heavy whipping cream and 1 tbsp butter. Combine butter and chocolate in a saucepan over low heat. Cook until melted and add cream. Stir and continue to heat for the next minute or two. Drizzle the chocolate glaze over cake. Decorate with nuts if desired.
