Sugar-Free Pancakes

I want to share this trustworthy recipe with you. Honestly, these are THE BEST pancakes I have had in my life! Read on to see how to make your fluffy, sugar-free and cloud-like pancakes.

To make the pancakes you will need: 350 g ricotta cheese – 200 ml milk – 4 eggs separated – 125g flour – 1tsp baking powder- 1 pinch of salt – 50 g butter

First, mix ricotta with milk and egg yolks, then add flour, baking powder and salt. Mix together until smooth. In a separate bowl whisk egg whites until cloudy and add them slowly into the batter. Mix with a spoon trying to keep all the air.

Heat a nonstick pan, add a little butter to lightly grease it, pour the batter onto the pan in round shapes. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden.

Serve with honey, maple syrup or fruit!
